Zucchini is Coming Out of Everywhere!!!

Our Kevin's garden is producing zucchini so fast that we can't keep up with it!! We are both taking squash to work several times a week, we've been eating it every night, and we have a huge stash of grated zucchini in the freezer for future summertime goodness this winter. I'm almost to the point of never wanting to see another zucchini or summer squash!!

Tonight I tried something new...it wasn't bad, but it wasn't great either-just kind of...eh-ok. It's a cheddar bacon squash impossible pie/quiche thing. All Kevin and Adam needed to hear was bacon and cheddar...but when I mentioned the squash...they hesitated.

I think it needs some sort of sauce or something-it was very dry. It had just the right amount of bacon, squash and cheese, but needed something more.

  

This was our first try at red onions-we got a bumper crop!!!

Kevin ran in the Michigan Warrior Dash this morning. He really enjoyed it! He ran with 6 of his co-workers. One guy posted a video to facebook of them jumping over fire. Kind of ironic since they all work in the Trauma Burn O.R.
